The dish presented in this video is the improved version of miki. The original recipe for this noodle soups requires only water to be added to the dough. The dough is not over worked to keep it soft and not elastic. They use old wine bottles as rolling pin to flatten the dough and kitchen knife or sometimes machete to cut the dough into thin strips. The softness and irregular shape of the noodles, some what similar to German noodle "spetzle", gives the dish a delicious and velvety texture.
