hi everyone! first off, this video is less of a tutorial and more of a demonstration. it didn't totally turn out the way i wanted it to, but it is what it is. secondly, murray carter makes amazing knives and this one is one of my favourite knives to use. ok, so i'm sharpening a wide beveled murray carter gyuto on the scary sharp system. the scary sharp system basically started out as sharpening on sand paper. now we have 3m micro film to play with, and it comes in an array of grit sizes ranging from 80 micron down to .3 micron. now, this video shows how a wide beveled knife is sharpened. knife makers like takeda, moritaka, yoshikane, shigefusa make gyuto's, nakiri's, santoku's and other knives with big grinds, and this is how i personally sharpen them. i usually don't use the scary sharp system to sharpen these knives, but for some unknown reason, i felt compelled to. i originally wanted to sharpen a cleaver on it. HOW TO USE SCARY SHARP SYSTEM: ======================================== ==== ok, so how i usually sharpen with these papers is very similar to how i use japanese waterstones. i move up the grit ladder until i'm finished polishing the knife. simple. typically, i'll count the number of strokes i make on each side of the knife so that there's an even grind on both sides. usually i'll start out with 15 strokes on each side, check for burr. (if there isn't then i'll do 15 strokes on each side untill there is.) if there's a burr then i'll go 13 on each side. then 10 ...

Take the top blade of the peeler and your paring knife and you just go back and forth and you turn it on the other side, same blade, back and forth. It'll dull the blade of your knife so I just bought like a three dollar paring knife that I use just for that.

Most of the instructions I found for sharpening scissors say that cutting aluminium foil would work. Other say you should "cut" smooth cylinders such as glass bottles. And yet others tell you to use sandpaper. Almost all of the instructions I found were for paper scissors. I need my scissors to cut fabric. I found a really good method to sharpen scissors. I tried two methods, the aluminium foil one and I also tried using that knife sharpening stick that comes in kitchen knife sets. Just watch this lil video I made! My brother helped me edit :3

Step 1: Identify Your Sharpening Needs --------------------------------------------------------------------- A combination stone typically has two sides. One side is a dark grey, which is like a coarse grit sandpaper. The other side is a light grey, which is like a fine grit sandpaper. * If your knife is very dull, then you'll want to use the dark, coarse side first. Then, you'll flip the stone over and use the light, fine side. * If your knife is only somewhat dull, you'll only use the light, fine side. Step 2: Lubricate the Stone --------------------------------------------------------------------- You'll first want to lay a wet paper towel down on your surface. Then, place the stone on the wet towel. This will help keep it sturdy. Also, pour some water on the stone itself to lubricate the surface and to keep the knife blade from getting too hot. * Some chefs like to use oil for lubrication. This is fine; just don't use a food grade mineral oil [such as canola or olive oil] because these will cause the stone to get really sticky and become rancid over time. * Another note: if you decide to use water for lubrication, then always use water. If you decide to use oil, then always use oil. Don't switch back and forth between the two. Step 3: Determine Your Angle of Attack ...
